Quickie Dinner Rolls ready to roll



Quick Easy rolls

1 cup warm water
2 packages ( tablespoon) active dry yeast
1 stick butter equivalent to 1/2 cup
1/2 cup sugar
2 eggs
1 t salt
4-41/2 cups all purpose flour

Combine warm water and yeast in a measuring cup with a little sprinkle of sugar and set aside until the foam starts to build up, like 2-4 minutes, depending on the room temperature. If you kitchen is warmer, it should start foaming in a minute or two.

Mix butter, sugar, eggs ( at room temperature), salt and flour, one cup at a time. Stir the mixture until all flour mixed in and dough start to stiffened to mix. Cover it with a plastic and let it rise more or an hour. Then it is time to put it in the fridge. Keep it in the fridge for  4 days and be ready for rolls when you need them.

If you are ready to make some for a little snack, cut a quarter of the dough and start rolling into into several balls pieces on a lightly floured board to avoid sticking to your hand. Depending on how much rolls you want for the day and return the rest of the dough back in the fridge for next day rolls.

Grease the baking pan and lined the balls of unbaked rolls, cover and let dough rise in an hour or less.

Preheat oven to 375 and back for 10-15 minutes. Brush warm rolls with melted butter.

On my part, I use the portable oven or mini-oven for baking a little batch as it is good for one serving.  It only takes 10 minutes to bake a small batch and doesn't heat the house during summer months.

Most of the time, I would add a mixture of cinnamon, sugar and butter on top for a cinnamon roll taste.

Pick a pear for me


The weather seems cool today, despite summer is here. This is what I describe as summer chill. The mornings break open with draftiness, under your own steam outside needs a pair of socks to temperate my feet together with a pair of running shoes. A light jacket helps swathe my back to keep me from getting cold. Just a prevention from sickness that appears once in a while when weather is unpredictable.

The pear tree is satiated with pears, small and firm, yet ready to be taken. I need a ladder to find the best one. They are medium sized, maybe not enough water, I thought. Luckily, a ladder was standing next to the playhouse where I use to play as a kid. The playhouse look dilapidated but standing silently. It is shabby yet full of memories. I picked the ladder with my right hand and carried it next to the pear tree. I climbed the few steps after situating it to the best place, where pears are bounty, waiting for me. Up, up and above, high enough to reach bunch of pears gathered one area, I touched each one, compare size and picked the biggest one. That's what I thought but I was off beam. When I examined the pear, it no bigger than any of the rest. Disappointed, I held myself responsible like it was a bad assessment. Like the decisions I made with my life. It was big and failure crept inside me. I came down the ladder and sit there for a while. Reflecting on my recent action, decision and my mood.

Oh well, it is no different from daily decisions made by me. It happened a few times. Those times when I chased the rainbow, those times where I want the best of me. It dawned on me that choosing something I believe in, is what matters. I may have chased the rainbow a few times but it was worth chasing them because I believe in my rainbows. I had fun chasing the rainbows, learning, yearning, and growing all at once. It was in those times that I have became a better person, a better experience and a better strength to face the next challenge in life.

Then I enjoy the pear, so scrumptious and fresh from the tree. This is my pick a pear for me moment and it was worth the time.

Funny questions for laughs





Why isn't the number 11 pronounced onety-one?


If 4 out of 5 people SUFFER from diarrhea...does that mean that one out of five enjoys it?

I thought about how mothers feed their babies with tiny little spoons and forks, so I wondered what do Chinese mothers use, Toothpicks?


Why do they put pictures of criminals up in the Post Office? What are we supposed to do, write to them? Why don't they just put their pictures on the postage stamps so the mailmen can look for them while they deliver the mail?


Is it true that you never really learn to swear until you learn to drive?


If a cow laughed, would milk come out of her nose?

Yosemite Park, California



We visited Yosemite Falls on a nice Saturday when the weather is getting ready for summer, not quite hot yet. The entrance fee cost $20 per car and $40 for a year pass which is a better deal to purchase if you plan to visit Yosemite Park few times in a year. It is a nice place to frequent when time allows, serene and fresher air with all the tall trees you can see around. There were a lot of tourists roaming around that day. The bike paths looks busy with all kinds of bike and riders. Squirrels roam around freely, trying to hide from people whenever they see one, yet can't resist picking some nuts for them to enjoy. There was this one squirrel feeling trap by us, humans. I was getting out of the restroom and notice some noisy people rushing with their ipad. On the corner, was a squirrel, holding a pine cone just perfect for him. He was looking around, must be wondering what to do as he is surrounded by us. I was standing at the back ( I just got out of the restroom), 3 people sitting ( getting ready with their ipad) on a bench facing the squirrel, a photographer trying to take a good shot of him and a passerby who stop to watch the whole thing. He went around and round, trying to find a way out but holding tight of the pine cone. I moved away to give room for the squirrel to ran far from us. It was a fun moment to pass the time, relaxing and humane.
