Homemade Mayonnaise

I would like to share this homemade mayonnaise from Diana Bauman at Spain-in-Iowa.com recently discovered while browsing the net. You will need the following:

Grapeseed Oil
Extra Virgin Olive Oil
Eggs
Lemon Juice
Salt
Dijon Mustard
Whey (optional - if you want it to last 2 months)

Directions
1. Combine 3/4 cup grapeseed oil with 1/4 cup extra virgin olive oil and set oil mixture aside
2. Add eggs (one egg and one egg yolk), 2 tbsp lemon juice, 1/2 tsp salt and (optional for taste) 1 tsp Dijon mustard to a blender and blend for a couple of seconds
3. Slowly drizzle oil mixture into blender while blending again until oil and all ingredients are fully mixed
4. That's it. However, never make your mayo on days when there is an electrical storm. It's an old tip, but it works. The materials will not set up properly if made when lightning or heavy electrical activity is present.

This lasts for 3-4 days. For having it last 2 months, you'll need to add whey.


If you only need a single serving, break down the ingredients into smaller proportions. Experiment to find out the proper ratio of each ingredients. I am sure whatever your purpose in making this homemade mayonnaise will still compliment the food you are making thou it may not be perfect.
